  • 3 tablespoons flour

  • ¾ cup panko breadcrumbs

Instructions

  2. In another shallow dish, mix panko breadcrumbs and parmesan cheese thoroughly.
  3. Dip each zucchini slice into the egg mixture, then press it into the breadcrumb mixture until fully coated.
  4. Preheat your air fryer to 400°F.
  5. Arrange half of the zucchini slices in a single layer in the air fryer basket and lightly spray with oil. Air-fry for 5-7 minutes until golden brown. Flip and air-fry for an additional 5-7 minutes until crispy.
  6. Repeat with the remaining slices.
