  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Prepare the apple cider reduction by simmering it in a saucepan until it thickens into syrup (30-40 minutes). Let cool.
  2. Make the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth; set aside.
  3. In a mixing bowl, cream softened butter with sugars, then add egg yolks and vanilla. Gradually mix in flour and spices until just combined.
  4. Preheat oven to 350°F (175°C). Scoop cookie dough onto lined baking sheets, pressing down to create an indentation for the cheesecake filling. Fill each indentation with about one tablespoon of cheesecake mixture.
  5. Bake for approximately 11 minutes or until edges are golden brown. Brush warm cookies with melted butter and sprinkle spiced sugar on top before serving.
