  • ½ cup (120 ml) milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)
  • ¾ cup all purpose flour (for crumble topping)
  • ¼ cup packed light brown sugar (for crumble topping)
  • 2 tablespoons granulated sugar (for crumble topping)
  • 1 teaspoon ground cinnamon (optional, for crumble topping)
  • 4 tablespoons unsalted butter (melted, for crumble topping)

Instructions

  1. Preheat oven to 400°F and prepare a muffin tin with paper liners.
  2. In a medium bowl, mix flour, brown sugar, granulated sugar, and optional cinnamon for the crumble topping. Stir in melted butter until clumps form; set aside.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  4. In a large bowl, cream together brown sugar, granulated sugar, and room temperature butter using an electric mixer until fluffy. Add eggs, sour cream, and vanilla; mix well.
  5. Gradually add the flour mixture to the wet ingredients along with milk; stir until just combined. Fold in diced apples gently.
  6. Fill muffin cups about three-quarters full and top generously with crumble mixture.
  7. Bake for about 20 minutes or until a toothpick inserted comes out clean. Cool slightly before transferring to a wire rack.
