  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup unsalted butter (room temperature)
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple (peeled and finely chopped)
  • ¼ cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, ground cinnamon, and fine salt.
  3. In a large bowl, beat butter with granulated and brown sugars until light and fluffy.
  4. Add egg and vanilla to the butter mixture, mixing until combined.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined.
  6. Gently fold in chopped apples.
  7. In a small bowl, mix together granulated sugar and ground cinnamon for rolling.
  8. Roll tablespoon-sized portions of dough into balls and coat them in the cinnamon-sugar mixture.
  9. Space cookies on prepared baking sheet and bake for 8–10 minutes until edges are golden.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
