  • 1 cup water (for sauce)
  • 1 tbsp chicken bouillon (for sauce)
  • 1/8 cup olive oil
  • 2 cups long grain white rice
  • 1/4 onion (finely diced)
  • 1 garlic clove (minced)
  • 1 tbsp chicken bouillon (for rice)
  • Pinch whole cumin
  • 1 1/2 cups water (for rice)

Instructions

  1. Make the Tomato Sauce: Cook tomatoes, onion, and garlic in water until soft. Blend with chicken bouillon until smooth.
  2. Prepare the Rice: Heat olive oil in a stock pot. Toast rice for about 5 minutes. Add finely diced onion and continue stirring until golden. Mix in minced garlic, chicken bouillon, whole cumin, water, and the blended tomato sauce. Stir well.
  3. Cook: Cover the pot and cook on medium heat for 12 minutes. Remove from heat and let rest covered for an additional 5 minutes before serving.
