  • 1 teaspoon extra virgin olive oil
  • 6 whole scallions, thinly sliced (dark green portion kept separate)
  • 16 ounces frozen corn kernels (or 3 cups fresh)
  • 1 teaspoon Tajin or Trader Joe's Everything but the Elote Seasoning Blend
  • 4 ounces ⅓-less-fat cream cheese
  • ¼ cup light sour cream
  • 7 ounces Cotija cheese, grated (1¾ cups)
  • Chopped fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 350°F.
  2. In a skillet, heat olive oil over medium heat and sauté scallions until softened.
  3. Add corn and seasoning; cook until corn softens, then mix in cream cheese until smooth.
  4. Remove from heat; fold in sour cream and ¾ cup Cotija cheese.
  5. Bake for 10-12 minutes until edges bubble.
  6. Broil for 2-3 minutes until top is golden brown.
  7. Garnish with reserved scallion greens and chopped cilantro before serving.
