  • 1/2 tsp salt (divided)
  • Avocado oil spray (or 1 to 2 tsp liquid oil)
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper
  • Additional salt to taste

Instructions

  1. Preheat your oven to 225°F.
  2. Slice the zucchini into 1/8 inch thick rounds using a mandolin slicer.
  3. Layer the sliced zucchini in a colander, sprinkling with 1/4 tsp of salt between layers, and let drain for one hour.
  4. Pat the zucchini slices dry with a towel and arrange them on baking sheets lined with parchment paper.
  5. Lightly spray with avocado oil and season with smoked paprika, ground pepper, and remaining salt.
  6. Bake for 70 to 90 minutes, rotating sheets halfway through until crispy and browned.
  7. Serve immediately or store in an airtight container for up to three days.
