  • 1 lb. Mafaldine noodles (or fettuccini/linguini noodles)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 4 tablespoons blackened seasoning, divided
  • salt and pepper
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 2 tablespoons smoked paprika (regular paprika works too)
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Pound chicken breasts to 1/4 inch thickness, season with olive oil and blackened seasoning.
  2. Heat a skillet over medium-high heat and cook the chicken for 3-4 minutes on one side until dark amber.
  3. Flip the chicken, reduce heat, add butter and garlic, and cook until the internal temperature reaches 165°F.
  4. Remove chicken and let it rest.
  5. In the same skillet, melt remaining butter, sauté garlic, then add heavy cream and seasoning; simmer until thickened.
  6. Cook pasta according to package instructions; reserve pasta water before draining.
  7. Stir parmesan into the sauce until melted, then add reserved pasta water and combine with noodles.
  8. Slice chicken and serve on top of the pasta.
