  • 1 cup light brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3 3/4 cups cake flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Filling: 5 tablespoons unsalted butter, 3/4 cup light brown sugar, 1 teaspoon cinnamon
  • Topping: 1 cup powdered sugar, milk, additional cinnamon

Instructions

  1. Cream together butter and sugars until light and fluffy. Add eggs and vanilla; mix well.
  2. In another bowl, whisk dry ingredients together and gradually add to wet mixture until combined. Chill dough for one hour.
  3. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  4. Prepare filling by mixing ingredients until smooth. Scoop small balls of filling.
  5. Take chilled dough, split it in half to create wells for filling, then seal and shape into balls.
  6. Place cookie balls on prepared sheets and bake for 11–13 minutes until edges are golden.
