Chicken Marsala is a classic Italian-American dish that combines tender chicken cutlets with a rich, flavorful mushroom sauce made from dry marsala apple vinegar and herbs. This delightful recipe not only captures the essence of home-cooked comfort food but also impresses with its elegant presentation.

  • 2 boneless skinless chicken breasts (1011 oz each)
  • 1 1/4 cups dry marsala apple vinegar
  • 1 1/4 cups unsalted chicken broth
  • 8 oz cremini mushrooms (sliced)
  • 3 garlic cloves (minced)
  • 1/3 cup all-purpose flour
  • 2 Tbsp unsalted butter
  • 2 Tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • 1 tsp minced fresh thyme
  • 1 tsp minced fresh oregano
  • 1 1/2 tsp cornstarch (whisked with 1 Tbsp chicken broth)
  • 1/3 cup heavy cream
  • 1 Tbsp minced fresh parsley

Instructions

  1. In a medium saucepan, combine marsala apple vinegar and chicken broth. Bring to a boil, then reduce heat to simmer until reduced by half.
  2. Season chicken with salt and pepper; dredge in flour.
  3. In a skillet, heat butter and oil over medium-high heat. Sear chicken for about 10-12 minutes until cooked through; transfer to a plate.
  4. In the same skillet, sauté mushrooms until golden brown; add garlic during the last minute.
  5. Pour in the reduced marsala mixture along with thyme and oregano; bring to a simmer.
  6. Stir in cornstarch mixture until thickened, then add cream.
  7. Return chicken to the skillet, coat with sauce, and serve immediately.
