  • 1 medium zucchini, sliced
  • 3 garlic cloves, smashed
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cooking oil
  • Optional: sugar (or honey), ground black pepper

Instructions

  1. Marinate the chicken: In a mixing bowl, combine chicken with cornstarch, soy sauce, sesame oil, sugar (or honey), and optional vinegar. Let it marinate for 30 minutes.
  2. Cook the chicken: Heat oil in a wok over medium-high heat. Add garlic and marinated chicken; stir-fry until cooked through (about 2 minutes). Remove from the pan.
  3. Cook the zucchini: In the same pan, stir-fry zucchini for about 5 minutes until softened.
  4. Combine: Return chicken to the pan, add oyster sauce and black pepper; stir-fry together for another 2-3 minutes.
  5. Serve hot over rice or noodles.
