Instructions

  1. Preheat your oven to 350°F (175°C). Prepare mini loaf pans by greasing them and lining with parchment paper.
  2. In a medium mixing bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, canola oil, and vanilla until smooth.
  3. Sift in the flour, baking powder, baking soda, pumpkin pie spice, and salt. Mix until just combined; avoid overmixing.
