  • ¼ cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch salt (optional and to taste)
  • 4 ounces softened brick-style cream cheese (lite is okay)
  • ¼ cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat oven to 350°F and prepare a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, sugars, oil, sour cream, vanilla, spices, and flour until just combined.
  3. Pour two-thirds of the batter into the prepared pan.
  4. In another bowl, mix cream cheese with additional sugar and flour until smooth; pour over batter in the pan.
  5. Carefully top with remaining batter and smooth it out.
  6. Bake for about 48 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Let cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
