Creamed Corn Orzo with Salmon is a delightful one-pot dish that brings together flaky salmon fillets and creamy orzo pasta in a luscious sauce, all enhanced by the natural sweetness of fresh corn.

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4 skinless salmon fillets
  • ¼ tsp salt
  • 1 tsp garlic powder
  • 1 tbsp Cajun seasoning
  • 4 garlic cloves (minced)
  • 1 yellow onion (finely chopped)
  • ½ tsp salt
  • 1 tsp black pepper
  • 3 sprigs of thyme (more for serving)
  • 1 cup orzo
  • 3 ears corn (kernels removed)
  • 2 ½ cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 cup heavy cream

Instructions

  1. Pat the salmon dry and season with salt, garlic powder, and Cajun seasoning.
  2. In a nonstick skillet over medium-high heat, heat olive oil and butter. Sear the salmon for about 3-4 minutes per side until golden brown; remove from skillet.
  3. In the same skillet, reduce heat to medium and add minced garlic and onion. Cook until soft.
  4. Stir in salt, pepper, thyme, orzo, and corn; toast for about 1 minute.
  5. Add chicken broth and bring to a boil. Reduce heat to medium-low and simmer until orzo is almost al dente (about 10 minutes), stirring frequently.
  6. Stir in Parmesan cheese, heavy cream, and lemon juice; simmer for an additional few minutes.
  7. Return seared salmon to the skillet until heated through.
  8. Serve garnished with fresh thyme and additional black pepper.
