Instructions

  1. Cook rigatoni in boiling water until al dente. Drain and set aside.
  2. In a skillet, melt butter over medium heat. Sauté onion for 5-7 minutes until translucent. Add minced garlic and cook for another minute.
  3. Stir in pumpkin puree and sauté briefly. Pour in heavy cream and whisk to combine. Add salt, pepper, sage, nutmeg, and brown sugar; simmer for 2-3 minutes before mixing in parmesan cheese.
  4. Toss cooked pasta with the pumpkin sauce until fully coated.
  5. Serve immediately, garnished with extra parmesan cheese if desired.
