  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 12 ounces penne or rotini pasta
  • Fresh parsley (for garnish)
  • Extra Parmesan cheese (for serving)
  • Crushed red pepper flakes (optional)

Instructions

  1. Rub chicken with Cajun seasoning and let marinate for 15–20 minutes if time allows.
  2. Place seasoned chicken in the slow cooker; add sliced bell peppers and pour in chicken broth. Set on low for 6–7 hours or high for 3–4 hours.
