  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 can (15 oz) pumpkin puree
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1/4 tsp ground ginger
  • 2/3 cup water
  • 1/2 cup cold butter, cubed
  • 3/4 cup all-purpose flour for crumb topping
  • 1 tsp ground cinnamon for crumb topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8×4 inch bread pans.
  2. In a large bowl, mix flour, baking soda, salt, and spices until well combined.
  3. Stir in granulated and brown sugars. Make a well in the center and add canola oil; mix until just combined.
  4. Add eggs two at a time, mixing thoroughly after each addition.
  5. Stir in pumpkin puree, water, and vanilla extract until smooth.
  6. Divide batter between prepared pans.
  7. For the crumb topping: blend cold cubed butter with flour, brown sugar, and cinnamon until coarse crumbs form; sprinkle over batter.
