  • 7 large bell peppers
  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 14.5 ounces diced tomatoes (one can)
  • 1 cup shredded cheddar jack cheese
  • 2 tablespoons extra-virgin olive oil (or avocado oil)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • Kosher salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375°F. Prepare a baking dish with the halved bell peppers.
  2. In a large pan over medium heat, sauté the onion in olive oil until soft. Add garlic and cook for an additional minute.
  3. Add the ground beef to the pan and cook until browned (about 5–6 minutes). Stir in cooked rice, diced tomatoes, tomato paste, oregano, and paprika. Simmer for about 4–5 minutes and season with salt and pepper.
  4. Fill each pepper with the beef mixture and place in the baking dish.
  5. Bake for about 10–12 minutes until peppers are tender. Top with cheese and bake for an additional 5–7 minutes until melted.
