  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)
  • Optional toppings: shredded cheddar, cilantro, sour cream, corn chips/strips, scallions or red onions, avocado

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté chopped onion until translucent (about 5 minutes).
  2. Add ground turkey and cook for 5 minutes, breaking it apart as it browns.
  3. Stir in tomato paste, chili powder, garlic powder, ground cumin, smoked paprika, and cayenne pepper until well combined.
  4. Add drained red kidney beans, Rotel tomatoes (with juices), and chicken broth. Bring to a boil then reduce heat to simmer for 15–20 minutes.
  5. Season with salt and pepper to taste before serving hot with your choice of toppings.
