  • 4 medium zucchini (coarsely shredded)
  • ½ teaspoon salt
  • ½ cup all-purpose flour
  • 2 large eggs (beaten)
  • ⅓ cup shredded cheese (Cheddar or Parmesan)
  • 1 tablespoon chopped chives
  • Salt & pepper (to taste)
  • Olive oil (for frying)

Instructions

  1. Place shredded zucchini in a colander and toss with salt. Let sit for 10 minutes to drain excess moisture.
  2. In a bowl, mix flour, beaten eggs, cheese, chives, salt, and pepper until smooth. Stir in drained zucchini.
  3. Heat olive oil in a skillet over medium-high heat. Drop batter by tablespoonfuls into the skillet and flatten slightly.
  4. Fry each fritter for about 2 minutes on each side until crisp and golden.
