  • 1½ tsp ground cinnamon

  • ¼ tsp salt
  • ½ cup brown sugar
  • ½ cup sour cream or plain yogurt
  • ½ cup whole milk
  • 1 large egg
  • Coarse sugar (for sprinkling)
  • ½ cup powdered sugar (for glaze)
  • 12 tbsp fresh squeezed lemon juice (for glaze)
  • ½ cup powdered sugar (for glaze)
  • 12 tbsp milk (for glaze)
  • ½ tsp vanilla extract (for optional glaze)

Instructions

  1. Preheat your oven to 425°F and prepare a muffin tray with cooking spray.
  2. In a microwave-safe bowl, melt the butter with molasses until smooth; let cool.
  3. In another bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, nutmeg, and salt.
  4. Combine the cooled molasses mixture with brown sugar, sour cream, milk, and egg until well mixed.
  5. Gradually fold the wet ingredients into the dry until just combined; do not overmix.
  6. Fill muffin cups to the top and sprinkle with coarse sugar if desired.
  7. Bake for 5 minutes at 425°F; then reduce heat to 350°F and bake an additional 11-14 minutes.
  8. Cool slightly before transferring to a wire rack and drizzle with lemon glaze.
