  • 1/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • Zest and juice of 1 lemon
  • 1 + 1/2 cups fresh blueberries
  • Icing sugar for glaze

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In a separate bowl, mix milk, oil, egg, vanilla extract, lemon juice, and zest until combined.
  4. Pour wet ingredients into dry ingredients and mix gently with a rubber spatula; fold in one cup of blueberries.
  5. Pour batter into the prepared loaf pan; sprinkle remaining blueberries on top.
  6. Bake for about 55 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool before drizzling with lemon glaze (icing sugar mixed with lemon juice).
