1 teaspoon dried rosemary
1 teaspoon dried thyme
1/4 teaspoon kosher salt (plus extra for salting eggplant)

1/2 teaspoon smoked paprika
Instructions
Prepare the eggplant by dicing it into 1-inch cubes. Sprinkle salt over the cubes and let sit for about 10 minutes to reduce bitterness. Rinse thoroughly and pat dry.
