  • 1/4 cup shredded Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (for the base)
  • 32 ounces meaty spaghetti sauce
  • 2 cups shredded mozzarella cheese (for topping)
  • 4 ounces pepperoni
  • Optional toppings: green peppers, onions, mushrooms

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Shred fresh zucchini and squeeze out excess moisture.
  3. In a bowl, mix squeezed zucchini with eggs, Parmesan cheese, mozzarella cheese, salt, garlic, and Italian seasoning.
  4. Spread half of the zucchini mixture in a greased baking dish; layer with half the spaghetti sauce and half the mozzarella cheese.
