  • 1 cup granulated sugar
  • 1¼ cups canned pumpkin puree
  • 2 large eggs
  • ½ cup canola oil
  • 1¼ teaspoons maple extract
  • ½ cup finely chopped nuts (pecans or walnuts)
  • 3 tablespoons brown sugar (packed)
  • ¼ cup all-purpose flour
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter (melted)
  • 1½ teaspoons pumpkin pie spice
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup milk
  • 1 cup powdered sugar (optional)
  • 2 tablespoons milk (optional)
  • ¼ teaspoon maple extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, mix nuts, brown sugar, flour, cinnamon, and salt for the topping. Stir in melted butter until crumbly.
  3. In a large bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
  4. In another bowl, beat eggs with sugar, oil, pumpkin puree, milk, and maple extract until smooth.
  5. Fold wet ingredients into dry ingredients until just combined; some lumps are okay.
  6. Pour half the batter into the prepared pan. Sprinkle half the topping over it. Add remaining batter and top with remaining nuts.
  7. Bake for about 50 minutes or until a toothpick inserted comes out clean.
  8. Let cool for 10 minutes before transferring to a cooling rack.
