  • ½ cup buttermilk
  • 1 tablespoon hot sauce
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon cayenne pepper
  • 4 burger buns (buttered and toasted)
  • Mayonnaise, coleslaw, and pickles for assembling

Instructions

  1. Slice chicken breasts in half horizontally to create thin cutlets. Season both sides with salt and pepper.
  2. In one bowl, whisk together buttermilk and hot sauce; in another, mix flour, cornstarch, cayenne, garlic powder, salt, and black pepper.
  3. Dredge the chicken in flour mixture, dip in buttermilk mixture, then back into flour to coat thoroughly.
  4. Heat oil in a frying pan to 350°F (175°C) and fry chicken for about 3 minutes per side until golden brown.
