  • 1 cup (226g) unsalted butter (softened)
  • 1/2 cup (68g) powdered sugar
  • 1/2 tsp peppermint extract
  • 2 Tbsp (28g) salted butter (softened)
  • 2 Tbsp half and half
  • 1/4 tsp peppermint extract
  • 1 1/2 cups (200g) powdered sugar
  • 1/4 cup (42g) finely crushed peppermint bits or candy canes

Instructions

  1. In a mixing bowl, whisk together the flour, cornstarch, and salt; set aside.
  2. Cream together the softened unsalted butter and powdered sugar using an electric mixer until light and fluffy. Mix in the peppermint extract.
  3. Gradually add dry ingredients to the wet mixture until just combined; do not overmix.
  4. Chill the dough for 1 hour, then preheat your oven to 350°F (175°C).
  5. Scoop tablespoon-sized portions of dough onto an ungreased baking sheet, spacing them 2 inches apart.
  6. Bake for 10-13 minutes until edges are lightly golden; cool on wire rack.
  7. For frosting: cream together salted butter, half-and-half, and peppermint extract; mix in powdered sugar until fluffy.
