  • 1 cup pumpkin puree
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk
  • 2 large eggs

  • 1/4 tsp nutmeg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt

  1. Preheat your oven to 350°F (175°C) and grease/flour a loaf pan or round cake pan.
  2. In one bowl, mix together the dry ingredients: flour, spices, baking powder, baking soda, and salt.
  3. In another bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time and mix well.
  4. Stir in pumpkin puree and vanilla until smooth.
