  • 100 g dark brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/4 tsp ground allspice powder
  • 1/4 tsp ground nutmeg powder
  • 1/4 tsp ground ginger powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 50 g granulated sugar
  • 1 tsp ground cinnamon
  • ⅛ tsp ground allspice
  • ⅛ tsp ground nutmeg
  • ⅛ tsp ground ginger

Instructions

  1. Prepare cheesecake filling by mixing room temperature cream cheese, granulated sugar, and vanilla extract until smooth.
  2. Preheat oven to 180°C (350°F). In a bowl, beat butter and sugars until fluffy. Mix in pumpkin purée, egg, and vanilla.
  3. In another bowl, whisk together flour and spices. Gradually combine dry ingredients with wet mixture.
  4. Scoop dough onto parchment-lined baking sheets, adding cheesecake filling in the center of each scoop. Optionally cover with more dough.
  5. Bake for about 12 minutes or until edges are lightly golden. Let cool on wire racks.
