  • 3/4 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 1/4 cups canned pumpkin puree
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 8 ounces block-style cream cheese (softened but still cool)
  • 1/4 cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a stand mixer, beat room temperature butter with granulated and brown sugars until fluffy. Add pumpkin puree, egg, and vanilla; mix until combined.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Scoop heaping tablespoons of dough onto the baking sheet with space in between.
  6. Bake for 13-15 minutes until edges are set but centers remain soft. Cool on wire rack.
  7. For frosting, beat softened cream cheese and butter together; add vanilla and sifted confectioners’ sugar until smooth. Frost cooled cookies.
