  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In a mixing bowl, combine all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry mixture; stir until just combined then spread into the prepared casserole dish.
  5. In a small bowl, mix together sugars and cinnamon; fold in chopped pecans and sprinkle over the batter.
  6. Carefully pour hot water over the topping without stirring.
  7. Bake for approximately 40 minutes or until set in the center.
  8. Allow cooling for about 5 minutes before serving.
