  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Pour in the melted butter and stir to create the crumble mixture.
  3. Press half of the crumble mixture into the prepared baking dish for the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, eggs, and pumpkin pie spice until smooth.
  5. Pour the filling over the crust and spread evenly. Top with remaining crumble mixture and chopped walnuts if desired.
  6. Bake for 30–35 minutes until golden brown and set. Allow cooling before slicing into squares.
