  • 2 cups shredded carrots
  • 2 cloves garlic, minced
  • 2/3 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1/3 cup sliced scallions
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Place shredded zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to drain excess moisture. Squeeze out remaining liquid.
  2. In a large bowl, combine the drained zucchini with shredded carrots, minced garlic, flour, beaten eggs, scallions, salt, and pepper. Mix well.
  3. Heat olive oil in a sauté pan over medium-high heat until shimmering.
  4. Scoop three-tablespoon mounds of the mixture into the pan, flattening them slightly. Cook for 2-3 minutes on each side until golden brown.
  5. Drain cooked fritters on paper towels and season with salt while hot.
  6. Serve immediately with sour cream or yogurt.
