  • 16 ounces Italian sausage
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • Fresh cracked pepper
  • Shaved Parmesan
  • Fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onion with a pinch of salt and pepper for 3–4 minutes until softened.
  3. Add minced garlic and Italian seasoning; sauté for another 30 seconds before mixing in tomato paste.
  4. Add crumbled Italian sausage; cook until browned.
  5. Stir in chicken broth, crushed tomatoes, and ravioli, seasoning with salt and pepper.
  6. Simmer on medium-high heat; reduce to low until ravioli is cooked al dente (about 3–5 minutes).
  7. Incorporate chopped spinach and heavy cream; cook until spinach wilts.
  8. Adjust seasoning if needed; serve garnished with Parmesan and parsley.
