  • 2 tablespoons olive oil (divided)
  • 1 lemon (quartered)
  • 1 tablespoon honey
  • ¼ cup (20 g) fresh basil, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine cubed potatoes with 1 tablespoon olive oil, thyme, oregano, salt, and black pepper; toss to coat.
