  • 240ml dairy-free milk
  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 20ml aquafaba
  • Ground Oreo crumbs (for decoration)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a cupcake tin with liners.
  2. In a mixing bowl, combine dairy-free milk and apple cider vinegar; let it sit for about 5 minutes.
  3. In another bowl, whisk together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Mix sunflower oil into the curdled milk mixture, then gradually combine it with the dry ingredients until just mixed.
  5. Fill the lined cupcake tin two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting with whipped dairy-free butter mixed with icing sugar and aquafaba.
