  • 1 lb lean ground beef
  • 1 small onion (diced)
  • 1 stalk celery (diced)
  • 1 small green pepper (chopped)
  • 1 tablespoon cooking oil
  • 10 oz. Rotel (tomatoes with green chilies)
  • 28 oz. stewed tomatoes
  • 14 oz. kidney beans (do not drain)
  • 14 oz. pinto beans (do not drain)
  • 14 oz. tomato sauce
  • 1.25 oz. dry chili seasoning
  • 1 tablespoon white vinegar

Instructions

  1. In a large stock pot, heat cooking oil over medium-high heat. Add ground beef, diced onion, celery, and green pepper; cook until the beef is browned and vegetables are softened (about 8-10 minutes). Season with salt and black pepper.
  2. Stir in the canned Rotel, stewed tomatoes, undrained kidney beans, pinto beans, tomato sauce, and dry chili seasoning; mix well.
  3. Reduce heat to low and cover the pot. Let the chili simmer for at least one hour to allow flavors to meld.
  4. After an hour, stir in white vinegar for added flavor complexity.
  5. Serve hot topped with shredded cheddar cheese if desired.
