  • 4 medium zucchinis
  • 1 bell pepper
  • 1 yellow onion
  • 4 cloves garlic
  • 1 lb ground turkey
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 eggs

Instructions

  1. Preheat oven to 400°F.
  2. Grate zucchini and drain excess moisture using a colander.
  3. In a mixing bowl, combine drained zucchini with eggs, Parmesan cheese, black pepper, onion powder, and Italian seasoning.
  4. Press the zucchini mixture into a greased 9×13 baking pan and bake for 20 minutes.
  5. Sauté chopped onion and bell pepper in olive oil until soft; add minced garlic for one more minute.
  6. Cook ground turkey in the skillet until browned; stir in marinara sauce and remaining seasoning.
  7. Spread the turkey mixture over the baked zucchini crust and top with mozzarella cheese.
  8. Bake for an additional 20 minutes until bubbly and golden brown.
