  • 1/3 cup vegetable oil
  • 5 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 Tbsp cornstarch
  • 2 tsp black pepper
  • 1 1/2 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
  2. Wash and dry the potatoes, then cut each into eight wedges.
  3. In a large mixing bowl, combine potato wedges with vegetable oil and minced garlic. Mix well.
  4. Add Parmesan cheese, cornstarch, black pepper, salt, onion powder, paprika, chili powder, and cilantro; stir until evenly coated.
  5. Spread wedges on prepared baking sheets in a single layer.
  6. Bake for 15 minutes at 400°F; then reduce temperature to 375°F and bake for an additional 40 minutes until crispy.
