  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cubed)
  • 2 teaspoons cumin
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2 tablespoons masa harina
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar

Instructions

  1. Toast the dried peppers in a dry pan for about 1-2 minutes on each side until aromatic. Remove stems and seeds.
  2. Soak the toasted peppers in hot water for about 20 minutes until soft.
  3. Blend the soaked peppers with half a cup of soaking water and salt until smooth; set aside.
  4. Toss cubed beef with cumin, salt, and pepper in a bowl.
  5. In a large pot, heat olive oil over medium-high heat and sear the seasoned beef until browned on all sides; set aside.
  6. In the same pot, add chopped onions and jalapeños; cook for about 5 minutes until softened.
  7. Add chopped garlic; cook for an additional minute.
  8. Return seared beef to the pot along with the chili paste; cook for another 2-3 minutes.
  9. Stir in beef stock, brown sugar, masa harina, and bring to a boil.
  10. Reduce heat and let it simmer covered for about two hours until beef is tender.
